Quick and Sweet: Lemon Crumble Cookies

As the saying goes, when life gives you lemons...put a spin on it and bake a batch of medicated Lemon Crumble Cookies. Perfect for when you’re craving something sweet, but with a tangy burst of flavor, lemon bar fans will swoon over this delicious recipe. Best of all, the added 10 mg of THC per serving will keep you satisfied all day long.

Coda Signature gives us the low-down on their light and citrus-tinged Lemon Crumble Cookie recipe.

Serving Size 1 cookie, 10mg THC per serving

  • 1 Cream & Crumble chocolate bar, 100mg THC (available at MedMen)

  • 1 cup butter, cold & cubed

  • 2 cups sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 ½  tablespoons lemon juice

  • 2 tablespoons lemon zest

  • 3 cups flour

  • 1 ¼ teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  1. Preheat oven to 350°F.

  2. In a large bowl, cream butter and sugar for 5 mins until light and fluffy; add eggs one at a time, mixing well.

  3. Add vanilla, lemon juice, and lemon zest and stir to combine.

  4. Stir in flour, baking powder, baking soda, and salt and mix until combined.

  5. Form dough balls, then break bar into 10 pieces along delineated serving lines, and add 10mg THC to each dough ball (we recommend chopping each 10mg chocolate square into little pieces first).

  6. Bake for 9-12 minutes, sprinkle with sugar.

This recipe makes 10 cookies.
